Salads are a healthy dietary option and most individuals find themselves looking for an uncommon recipe for salads, especially when they are diabetic and are fed up of the same boring menu, day in and day out. Here is a recipe for a delicious salad, rich in a variety of nutrients, to promote a healthy lifestyle.

Ingredients

The ingredients required to prepare this special salad include four slices of crisply cooked turkey bacon, six cups of broccoli florets, three fourth of a cup of mayonnaise or salad dressing, half a cup each of raisins and Pure Via sweetener (or twelve packets of Pure Via sweetener), a third of a cup of pecans (sunflower seeds could serve as an alternative) and a small red onion – thinly sliced. Two tablespoons each of white vinegar and fat-free milk along with salt and pepper to match one’s preferences are the other ingredients that are needed.

Preparation

To make the salad, mix the broccoli florets, sliced onion, pecans and raisins in a large salad bowl. Using a blender, mix the sweetener, milk, vinegar and salad dressing or mayonnaise well until a smooth consistency is obtained. Pour the dressing over the main ingredients in the bowl, add salt and pepper as per taste and toss it well. Cover the bowl with cling wrap and place the bowl in the refrigerator, overnight. Just before serving the salad, garnish it with bits of the turkey bacon. The preparation should serve eight individuals, considering the size of each serving to be a cup.

This healthy diabetic friendly recipe is not only delicious but is a healthy alternative to potato salad which contains a lot of sugars and carbohydrates.
